  1. For Boiling Choley:
  2. 1 Cup Chickpeas (soaked overnight)
  3. 1 Chinnamon stick
  4. 2 Bay leaves
  5. 2 Tea bags
  6. 4 cloves
  7. 2 Big black Cardamom
  8. 2 Green Cardamom
  9. 3 Cups Water
  10. 1/2 teaspoon baking powder
  11. For Dry Masala for choley:
  12. 1 teaspoon turmeric powder
  13. 1/2 teaspoon salt
  14. 1 teaspoon garam masala powder
  15. 1/2 teaspoon hing
  16. 1 teaspoon Red chili powder
  17. 1 teaspoon roasted cumin powder
  18. 1 teaspoon Fenugreek leaves powder
  19. 1 teaspoon coriander powder
  20. 1 Teaspoon dry Mango powder
  21. 1/2 teaspoon roasted Anar Dana powder
  22. For Normal Masala:
  23. 1 Big Onion(paste)
  24. 2 Big Tomato Puree
  25. 2 Teaspoons ginger garlic paste
  26. 4 Tablespoons refined
  27. For Tempering:
  28. 3 TeaspoonS oil
  29. 1/2 teaspoon whole cumin seeds
  30. 4 pieces chopped garlic
  31. 1 Teaspoon red chilli powder
  32. 2 Green chillies

Instructions to make to make Spicy Amritsari Pindi Choley

  1. Now take a pressure cooker add there soaked chickpeas, add all khade masale (dry masala), pour water to it and now add 2 tea bags and cover the lid and turn on the gas flame and cook it for until 1 whistle comes. Then on a medium flame allow the cooker for 4 more whistle and then then off the gas and wait for the pressure cooker to realise gas by it's own.
  2. Now check your boiled Choley and separate it's water but don't throw the water keep it aside.
  3. Turn on the gas flame and place a Kadhai and there oil, onion paste, ginger garlic paste and cook it for 2 mins in medium flame then add tomato 🍅 Puree and cook it for 1 to 2 mins and cover the lid of the kadhai and cook it in medium flame for 2 mins.
  4. In the mean time prepare the masala mix take a bowl and add dry powder masala and mix it properly. Now check the gas remove the lid and add all dry masala to it and cook for 1 min then add boiled Choley to it, water (which we have extract from boiled Choley) and again cover the lid and cook for another 4 mins. Now transfer it to a bowl 🥣.
  5. Place a tadka pan add there 3 Teaspoon of oil whole cumin seeds, chopped garlic, 2 Green chillies, red chilli powder. when it starts cracking turn off the gas flame and pour it into the choley gravy. Serve it with Bhatura, Poori or rice.
